1 lb. turkey breast, cubed
1 can pinto beans, drained and rinsed, 15.5 oz.
1 can hominy, drained and rinsed, 15.5 oz.
1 can cream corn, 14.75 oz.
1 can tomatoes, diced, drained and rinsed, 15.5 oz.
1 can tomatoes and chilies, 10 oz.
1 pkg. ranch dressing mix (2 ½ t.)
1 pkg. taco seasoning, Get Fresh! recipe (1 T. + ¾ t.)
1 ½ c. water

Taco Seasoning:
1 t. minced onion, dried
1 t. chili powder
½ t. cumin powder
½ t. crushed red pepper
½ t. minced garlic, dried
½ t. cornstarch
¼ t. oregano

Ranch Dressing Mix:
1 t. parsley, dried
½ t. pepper
½ t. garlic powder
¼ t. onion powder
¼ t. dill
1/8 t. thyme, dried

Optional Toppings:

sour cream, light
shredded cheese, reduced-fat

In a large stock pot add turkey, pinto beans, hominy, cream corn, diced tomatoes, and tomatoes with chilies. Add water and bring soup to a simmer on medium-high heat. Add ranch dressing seasoning and taco seasoning. Bring to a boil. Serve with baked chips, salsa, light sour cream, avocado, or reduced-fat shredded cheese.
