2 tbsp olive oil
2 tbsp garlic, minced
1 onion, chopped
1 yellow squash, chopped
1 zucchini, chopped
1 1/2 cups yellow corn
1 1/2 cups black-eyed peas
2 cups fire roasted tomatoes
3 tbsp vegetable base
1 gallon water

Heat oil in a large pot. Add all ingredients to the pot and stir. Simmer for 30 minutes. Serve hot.
