½ c. carrot, shredded
½ c. onion, chopped
2 garlic cloves, minced
¼ c. parsley, minced
½ c. parmesan cheese
2 egg whites
1 c. breadcrumbs, Italian seasoned
3 T. ketchup
½ t. salt
½ t. pepper
1 lb. ground beef, extra lean
Preheat oven to 400 degrees. In a large bowl mix all ingredients except the ground beef. Add the ground beef and mix well. Cover a baking sheet with foil and spray with cooking spray. Roll mixture into meatballs, 2 T. each, and place on baking sheet. Bake for 20-25 minutes or until cooked through.
Freezer Directions: Place meatballs in a freezer bag before baking. When ready to bake, thaw then bake as directed above. If cooking from frozen state increase baking time by 30 minutes.
Makes 10 servings- 2 meatballs per serving.
