2 garlic cloves, minced
1 can black beans, drained and rinsed (15.5 oz.)
½ c. onion, chopped
½ c. bell pepper, chopped
1 pkg. taco seasoning, Get Fresh! recipe
4 egg whites
1 c. cheese, reduced-fat, shredded (cheddar, Monterey jack, etc.)
8 whole wheat tortillas
salsa for serving, if desired
Spray a medium saucepan with cooking spray. Add garlic, onion and bell pepper and sauté until heated through, about 5 minutes. Add black beans and taco seasoning and sauté until heated through. Set aside to cool. In a small bowl whisk 4 eggs and 4 egg whites. Add eggs to the bean mixture and scramble until cooked through. Warm tortillas in the microwave so they are easier to assemble. Place ½ c. of the scrambled egg mixture in a line down the center of 1 tortilla. Add 1 rounded tablespoon of cheese to the tortilla. Roll the tortilla to form a burrito, then wrap in foil to freeze.
To reheat: Unwrap the burrito and discard the foil. Place in the microwave for 2-3 minutes until warmed. Or to reheat in the oven, bake at 350 degrees for 20-25 minutes.
